If I didn’t have prior commitments this afternoon, I would have the smoker going and be cooking the four racks of ribs I have in the deep freeze right now.
Bonus info: the 3-2-1 method works amazingly for pork ribs. I will cut racks in half, smoke for the first three, then vacuum-seal and freeze each half-rack separately. After defrosting, the additional cooking can be completed in the oven any time. Doing this, they taste like they came directly off the smoker, taste wonderful, and are fall-off-the-bone tender. It’s a great way to enjoy ribs whenever you like…
