Does anyone know if you can use two 14500 batteries in a Coast G26 instead of two AA's? I know it's roughly double the voltage but I'm curious to know if anyone thinks that the light could "handle it" without burning anything up.

No idea but I wouldn’t waste much effort on Coasts.
If Coast are like LED Lenser, then they use resistors in the tailcap switch, the LED would fry with the higher voltage. With the 14500 you would be getting 8.4v fully charged, rather than 3v of AA batteries. I wouldn’t expect it to live for long.
You may use one 14500 with a conductive spacer of 50 mm length. It may shine brighter but I don't know for sure if the driver can handle that slightly higher voltage.
