Suggestions wanted for filleting knife

As above I want a new filleting knife for filleting fish, to replace my ageing Martini knife.
I am looking for something with a fixed blade around 15cm, a bit of flex in the blade & that keeps a good edge.
Any suggestions please ?

This would be something I’d want to touch and feel the flexibility of before purchase, so I would hop in a cooking store (or well they probably have this kind of thing in great abundance in the local hypermarche here :slight_smile: (focus on cooking is greatly different between France and UK I guess)

Dexter Russell filet knives are great! That’s all I use to clean fish, super easy to sharpen and budget friendly. I have a bait and tackle store near me that has a HUGE spring tent sale and they always have several boxes of them for pretty cheap. I have about a dozen or more that I’ve bought over the years. My wife has even snagged a few and uses them in the kitchen almost exclusively. I also use one to skin deer and prep the meat for processing.

Sorry I thought that there were lots of knife related threads on this section of the forum which is why I asked here ?

As a kid used to use Rapalas with wood handle, sharp enough, tough, but they were very slippery. I then switched to Sypderco Catcherman which was still slippery and not very tough, I broke the tip going through the spine on a redsnapper. I helped run a fishing resort for a while and guided for a year, so I had many knives to play with. Settled on the CRKT KOMMERS Big Eddy. Rubber handle, really nice flex for clean fillets, easy to sharpen and tough. Hope that helps. And no offense to anyone but there is allot of talk about knives on the forum. I ordered a cheap work knife that turned out pretty good thanks to the forum.

They look nice & you can”t beat personal recommendation but unfortunately shipping to the UK kills the deal really.

I have been looking in the hyper markets & kitchen utensil stores for a while now over here & haven”t seen anything suitable.
The filleting knives available in the fishing tackle stores over here are all over priced & poor quality IMO.
I have bought several, none of which have been any good IMO.
The Martini filleting knife I have had has served me well for a number of years now but is getting so worn it is getting very difficult to get an edge on it.

Gearbest seems to have nice folding, camping and out door knfes where Banggood seems more focussed on kitchen stuff.

Yes, unless I am missing them there are no suitable filleting knives I can see on Banggood.

Frost knives are a Mora derivative

Never really had a need for filleting knives, but in general, I like the quality and feel of Henckels and Wüsthof.

I was thinking this is more for the kitchen, but someone else mentioned camping, so I’m not sure if either H or W would be appropriate.

I don’t fish like I used to, but I still using a Marttiini. Also have a larger Case but it don’t get much use as I cant catch a big fish………

Why don’t you just order another Marttiini from Marttiini’s website?

Fancied something different TBH (must admit that the Dexters look like they would do the job but pity that they don”t seem to be available in the UK) but if I can”t find anything I may well get another Martiini.

Amazon sells them if that helps. Many retailers do

The only Dexter that Amazon UK sells is the P94813.
In the link from ChadB the P94813 is $16.80, on Amazon UK it is $80 !
