This knife simply would not hold an edge .
After a time I gave up and put the knife in a box …
Enter Guided Knife Sharpener … 22 Deg Bevel @ 180 grit + 400 grit to clean the bur
Gone from basket case to working knife ! Just from a change of angle on the bevel !
This is why I am retesting my old knives .
What was the old bevel ? 25deg and maybe more . I chose 22deg because I wanted to remove as little steel as possible .
