but after seeing LB is not bluffin with his muffin, i may have to give that a go. i do a similar pizza using ciabatta rolls with olive oil and basil tomato sauce; i can’t always get the ciabatta but i always have EMs handy.

Nice thing about ’em is that you can cover ’em up entirely with cheese, or leave a little space to let it have a sort of “crust” around the periphery.

Being that I toast ’em beforehand, they just tend to get overly dried and hard, so I cover ’em with cheese right to the edge.

Oh, and use foil or parchment paper so there’s no scrubbing the cookie-sheet or anything afterward.

I used to make something close to these back in my munchie days. Thanks for reminding me, next time English Muffins are 2 for 1 I’’l have to make some.

Mozzarella sticks and salami

I put pepper jack cheese and pepperoni in my quesadillas.

I used to use salami, but I think pepperoni tastes better and is less greasier than salami.

(Also, my favorite brand of salami/pepperoni is Gallo.)

Chili (just Hormel beef’n’beans; ain’t about to make it from scratch), a freakishly large minced jalapeno (literally bigger’n my MH20), and a good long squirt of Sriracha, topped with sour cream.

Waiting for the fire to go out before I finish what’s in the pan.

Absolutely. Not uncommon to end up a human-jetpack the next day or so.

Tropical trail mix with a handful of unsalted mixed nuts thrown in to cut the sweetness of the pineapple and papaya tidbits.

Chili does not have beans!
And a slow cooker is your best friend.
It’s always better after few days in the fridge.

There is a new gelato joint. They have lots of trendy flavors.
But the dark chocolate with salted caramel is stellar. Just finished a bowl.

My wife’s folks are fromTexas. They say the same thing. We went out to visit years back. They fixed chili for this old fat man. It was delicious and said the same about the cooker. Made home made tortillas too. I just about hurt myself eating them. Man the tamales they cooked in a big steam pot were unreal too.
