How to get the Perfect Crust on a Ribeye Steak

Hi all,

This is one of my very favorite ways to cook a steak. It’s kind of one of my other hobbies :slight_smile: Let me know what you think.

This is a great video and shows good cooking skills. Nice steak.
However, before I clicked on the video I was expecting a modded flashlight that would create that crust…

I don’t think we’re too far from that point :stuck_out_tongue: Then the next step will be a torch that’ll be able to crust steaks for a whole dinner service’s time :wink:

I personally like to sous vide and then just finish it on cast iron or carbon steel with a little bit of oil. It gets the same crust with much more even cook on the inside.

I think your steak would have looked a little better for the video if you let it rest longer before slicing.

The same thing that i was expecting.

I was expecting him trying to mod his DX80 with an incandescent/HID lamp.

Have you ever tried to sous vide the steak follow by quickly browning it over a weber charcoal chimney starter (not my gut) with a spare grate on top of it. Less than a minute each side. Only flip once or risk blindness.

Nice vid and interesting take. I generally use Alton Brown’s cast iron sear/oven method when I’m not grilling, but that definitely looks like a tasty alternative!

I only tried to make a steak once, and I was a total failure, I now see where did I go wrong, Thanks! I might try it again sometime!

I’ve never been much of a red-meat eater due to it usually being immolated beyond recognition (mum’s Old World, and any meat not carbonised to black was considered “raw”), but once had steak that I actually enjoyed at Peter Luger’s in Manhasset.

That ribeye looked sooooooo goooooood…
