Actually now's a good time for cucumbers! Especially since the pork blade roast is just about done! Tenderized with meat hammer and then marinated with fresh squeezed lime juice with black pepper, salt, cumin, oregano and garlic for couple hours. Roast in oven and then eat with freshly sliced cucumbers on the side!
Garden cucumbers are great. Seasoned rice wine vinegar and dill. We eat them daily in the summer.
