If i want to add 2 x 350mA chips to a driver that has 8 x 380 mA chips is there going to be any sort of problem?

Nope, no problem. It does not matter, 350 or 380, as long as they are the same type of chip.

No, you can mix and match. Since they are all in parallel, all that matters is the total output.
I can remember back in the day when the 1400ma driver version was the highest current driver you could buy.
Several people had problems (including me) mixing amc7135’s from different types of drivers. I don’t think any one every solved the mystery of why they would not work together, but they wouldn’t.
Now it seems that there is no problem at all. I have used 380ma on top of 350ma amc7135’s without a problem and vice versa.
