The convoy l2 reflector doesn’t offer much room for solder blobs at the negative and positive mcpcb contacts. I tried to get the silder as low as possible but even so, I suspect this is the reason why when I tighten down the bezel, the bezel, the light goes to full power. Could this be the case? If so, does anyone have any hax to get around this low profile design of the reflector bottom? Seriously thinking about taking a dremel to it but I’m sure I’ll ruin the reflector.

Yep that sounds like what is going on. Some reflectors just don’t have a lot of clearance around the base. Something that usually works for me is to add a flat piece of copper tape or solder wick material to basically make a very low profile contact. This allows you to then make your solder blob a little farther out from the center. 
There is a messy example in a 20mm MCPCB. You might have to add some tape or something to the shelf area to avoid any shorts.

Try to cover solder joints with kapton tape.
