I routinely sharpen knives at work, and my chefs have a multitude of
sharpening devices from stones to handheld diamond devices to wet wheel
machines and a work sharp.
Anyway, I was given a Takagi enclosed wet wheel machine— but it
is from Japan, and only designed for 100V.
What is the simplest way to adjust the voltage so I can use it on
the 120V power here without burning it up?

( Note: not a modder here— so I’m not going to solder any contraptions together)

For only 50W (ie, about 2A), you can get a 120V transformer with ~20V secondary, rated at least 3A. An 18V secondary is closest, 24V/25.2V next closest. Wire the secondary in series with the primary. You’ll see either ~140V (in-phase, step-up) at the ends, or 100V (out-of-phase, step-down). Go for the latter. It’ll be like a fixed-voltage variac.

Easy as falling off a toilet.

You can use this cheap little module. Additionally it can also control the speed of your motor. No solder required, just screw the wire to the terminals :student:

Dunno if I’d use a dimmer circuit on an induction motor, though. They strongly prefer pure sinewave AC, not chopped. They also tend to overheat at the slightest provocation because of harmonics.

It works fine on universal motors. For motors that require pure sine wave, a transformer with other circuitry will be required.
