unexpectedly good food and beverage pairings

I offered to make a run to Arthur Treachers for my mother trying to stimulate her apetite. She will be 73 in September and it is a constant challenge to find things that are appealing to her - she had 2/3 of her stomach removed and her vagas nerve cut to treat major ulcers in the 1980s. Anyway, on the way I decided I had a taste for sake and bought some Gekkeikan ($6.99 a bottle on sale at a major grocery chain). I decided on a gyro for myself (still haven’t found any sources for gyros anywhere as good as I got from the place in Giessen) while ordering shrimp and chips for mom. Having eaten ramen with fresh garden veggies only a few hours earlier I only ate part of the gyro.

Later, after starting on the sake I felt a little hungry and decided to re-heat the gyro. OMG, the saltiness of the gyro and spices used and the crisp sweetness of the sake… it was so good it inspired me to ask “what is your favorite food and beverage pairing?”.

Fish and chips

Vanilla ice cream and topped with balsamic vinegar. Yum.

Eggs with tomatoes

Cold pizza from the night before and hot coffee. The breakfast of champions.

Green bean stew spiced with masala, and a glass of redcurrant juice. Leagues tastier if you eat the stew with rice and beans cooked with fried garlic.

Heck yeah. I love it, my 9yo (live-in nephew) loves it, it’s just plain rad. Just gotta make sure it’s not chicken pizza on a workday, or the heartburn is killer :confounded:

White Vermouth (Martini) with just one or two drops of gin; it’s incredible how this alters taste.

As a joke, an old friend of mine (RIP Tommy) used to say his favorite meal was sardines and ice cream- hard to think of any worse possible combination than that :confounded:

Honey, milk and free-range chicken fat is surprisingly good. Also a fabulous homemade expectorant. Granny’s recipe :wink:

Of course tried some things while tasting.
Very finely cut fresh mint leaves added enriches it even more.
Finely cut fresh Rosemary I liked a lot but my wife less and our son preferred without any herbs

Next try, will be two versions with
1 a little bit of raw cocoa powder
2 a little bit of normal more bitter cocoa powder.
I expect 2 to be better, sweet,sour and bitter
That is 3 out of 5 basic tastes.
Soo, heheh I will do more based on 2 above:

2A as 2 but with a tiny pinch of salt
2B as 2A and now a pinch of ground Parmesan (rich in natural compounds for the umami taste)

A famous dish is shakshuka. It looks great, but somehow I wasn’t blown away by the taste.

Buckwheat pancakes, with buckwheat honey.

Sounds crazy but you should try. (also similar to others mentioned here)

Vanilla ice cream with hot sauce (I prefer Frank's Redhot)

Another is peanut butter chicken. Soo good.

Oatmeal and chocolate chip cookies. Raisins are optional, and I like them myself.

A Canadian favorite was baked beans and pancakes. My mother was from New Brunswick and that is what we had for breakfast once a week.
She did not add sugar or molasses to the beans and that is the way I prefer them. In fact I don’t use syrup on the pancakes until I am halfway through.
That’s desert!

That’s more Israeli/MidEastern than Chinese. Different spices, preparation, etc. To me, it looks like huevos-rancheros-from-Hell, from the pix I’ve seen. Regular e&t is Chinese “comfort food”, like mac’n’cheese, or Häagen-Dazs.

Dice up tomatoes, make a reduction of the juice and some tomato paste (or katchup, ’though…) to richen up the flavor, then just stir in the eggs. Serve over rice, top with scallions, regale. The dishes even look way way different, despite having the same 2 main components. Wouldn’t doubt that they taste different, too.

Damn, now I’m getting hungry for it…

+1 if no raisins. Oatmeal with raisins, or oatmeal with choc-chips, but I’ve tried ’em with both raisins and choc-chips, and ain’t a fan.

Okay, I’ll go for one…

Salami and grape-jelly on a kaiser roll.

People go “ugh!” at hearing it, but don’t bat an eye when served turkey with cranberry jelly, or lamb with mint jelly, ham with pineapple slices, ham with sliced apples, etc. Meat and fruit do go well together, but it depends on the combo.

So yeah, salami with grape jelly is quite awesome. The saltiness and greasiness of the salami, with the sweetness of the grape-jelly, along with the texture and absorption of the kaiser roll, are a culinary trifecta.

“Butter” both halves of the roll with the jelly, and let it soak in somewhat.
