It’s an interesting development, unlikely to be useful for portable lighting, the specific energy is “up to 48.3 Wh kg”, compared to NMC cells which, according to Dr Google, “have 150 to 300 Wh/kg, with common commercial cells often in the 200–250 Wh/kg range”.
LiFePO4 batteries have specific energy of “95–172 W⋅h/kg”.

Tofu brine was one of the first non-toxic alternative sourced electrolytes used. The University of New Orleans has developed a high calorie slightly toxic version using recycled cooking grease with bacon. These cells have been tested as power sources and school snacks for some time now but has a shorter self life. Twinkies and grape soda also show promise.
