Optic Diameter to LED Ratio

Am I correct in understanding that the larger the optic diameter for a given LED the narrower the beam will be and more throw it will produce?

And vice-versa if you were wanting more flood, you would aim for a smaller diameter optic?

I know within each sized optic you will have narrow-med-wide variations on top of the aforementioned.

You’re correct. Beam width is directly proportional to optics diameter, as long as that optics is designed for throw.
Note that this is correct only as long as optics shape is preserved. Reflector depth/diameter ratio, aspheric F#, many TIR variables affect beam width.
