To each their own I guess but if I wanted a folding kitchen knife I’d go for the TwoSun TS51.
More room for the fingers under the handle and nicer overall.
And like 4x as expensive but you can’t have it all

Yes that is a SWEET knife. At least with the Ganzo you can beat on it without feeling bad.

Can’t beat the Opinel Carbon for the price/sharpness/lightness/comfort. Size 12 is a basically a folding chef knife.
I do not like the new birdie. Too big finger choil and the bad angle tip.
I wouldn’t say that it’s that original.
It looks like a Spyderco Roc gone wrong.
That’s what I use in the kitchen too! 
Mine developed a nice patina:
I like the FFG blade (except the hole in it) and the big finger choil which the Spyderco ROC lacks. So I grabbed my dremmel and modded my ROC copy
I like that Spyderco a lot more than the design of the new Ganzo. I do not like the finger choil and the tip and the angle of the blade. I have a lot models that likes me more for buying.

The ROC looks better for sure. Ganzo should have made an axis-lock version with FFG blade.
As every one has his own issues about the F7551 we could start a modding contest.

I’m a big fan of carbon steel blade, you can resharpened them in less than 15 seconds and it will be crazy sharp! :face_with_monocle:
But you can only find them in traditional knifes and chef knifes…
