What do I need to do to make documents, spreadsheets, PDFs, etc on an iPhone?

To create documents, use the Pages app on the phone. Tap the + button to select from the available templates.

To save a document as a pdf: 1) open the document; 2) tap the share button; 3) scroll down to tap on Print; 4) tap on the share button at the upper right to select what you want to do with the pdf.
