It's a de-domed XRE Q5, on the stock star? If so, 3A is probably well beyond it's point of effective output, so any higher amps, the heat sag will probably reduce output.
XP-E2 is just a more efficient version of the emitter that is now in it. So given the same current it will produce more light. They can both handle about the same amount of amps. Putting them on a sinkpad allows you to drive them harder without losing lumens as fast to thermal sag. Without the sinkpad the emitters will dim quickly at higher amps. With the newer XP-E2 on a sinkpad you will get more lumens in the same package and with the sinkpad those lumens will stay up there much longer so you can drive it a little harder too. So you will have the same beam profile just a brighter light, more throw and more spill. Also with the sinkpad/noctigon you will not be stressing the emitter trying to push too hard so you should get longer life out of the emitter.
